- 6 cups chicken or vegetable broth
- 2 stalks lemongrass

- 2 Thai chilies
- 3 tbsp fish sauce
- 1 cup coconut milk
- 1/2 lb ground pork or chicken
- 1/2 cup chopped shrimp
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 2 scallions, finely chopped
- 1 tbsp soy sauce
- 16 wonton wrappers
Directions
- In a large pot, bring the chicken or vegetable broth to a simmer. Add lemongrass, kaffir lime leaves, galangal, and Thai chilies. Let the broth simmer for about 15-20 minutes to infuse the flavors.
- Add fish sauce and coconut milk to the broth. Stir well and let it simmer for another 10 minutes.
- In a mixing bowl, combine ground pork or chicken, chopped shrimp, garlic, ginger, scallions, and soy sauce. Mix well to combine.
- Place a small spoonful of the meat mixture in the center of a wonton wrapper. Wet the edges of the wrapper with water, then fold the wrapper over the filling and press to seal.
- Drop the dumplings into the simmering broth and let them cook for 5-7 minutes or until they float to the surface.
