Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 2 cups fresh spinach
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Directions

  1. Season chicken breasts with salt and pepper. In a large pot, heat olive oil over medium heat and brown the chicken on both sides. Remove chicken and set aside.
  2. In the same pot, sauté onions, carrots, and celery until tender. Add garlic and cook for another minute.
  3. Pour in chicken broth, diced tomatoes, thyme, and rosemary. Add chicken back to the pot. Simmer for 20 minutes.
