Käsespätzle
Käsespätzle is a beloved Alpine dish that combines the rich flavors of cheese, caramelized onions, and soft egg noodles. This hearty and delicious meal is simple yet satisfying, perfect for cozy nights in or festive gatherings.
Ingredients
- 2 cups all-purpose flour
- 4 large eggs
- 1/2 cup whole milk
- 1/2 tsp salt
- 1/4 tsp nutmeg
- 1 large onion, thinly sliced
- 2 cups shredded Emmental cheese
- 1/2 cup shredded Gruyère cheese
- 4 tbsp butter
- Salt and pepper to taste
Directions
- In a large mixing bowl, combine the flour, eggs, milk, salt, and nutmeg. Mix until a smooth, sticky batter forms.
- Bring a large pot of salted water to a boil. Press the batter through a spaetzle maker or a colander with large holes into the boiling water to create thin noodles. Cook for 2-3 minutes or until the noodles float to the surface. Drain and set aside.
- In a large pan, melt 2 tablespoons of butter over medium heat. Caramelize the sliced onions for about 10-15 minutes. Remove from the pan and set aside.
- Preheat oven to 350°F (175°C). In a baking dish, layer half of the spätzle, onions, and shredded cheese. Repeat the layers with the remaining ingredients.
- Dot the top with the remaining butter, season with salt and pepper. Bake for 20-25 minutes until the cheese is bubbly and golden brown.
- Let it cool slightly before serving. Garnish with fresh herbs, if desired, and enjoy hot.
