Blueberry Zucchini Bread is a delightful summer treat that combines the sweetness of fresh blueberries with the moistness of zucchini, creating a quick bread that is perfect for breakfast, brunch, or a nutritious snack.

2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon nutmeg (optional)
1 cup granulated sugar
1/2 cup packed brown sugar
2 large eggs
1/2 cup vegetable oil or melted coconut oil
1 teaspoon vanilla extract
2 cups grated zucchini
1 cup fresh blueberries
Instructions
Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
In another bowl, whisk together the granulated sugar, brown sugar, eggs, oil, and vanilla extract until smooth. Stir in the grated zucchini.
Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
Fold in the fresh blueberries gently.
Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
Once baked, remove the bread from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack.
