Buffalo Chicken Taquitos are a delightful twist on traditional taquitos, combining the bold flavors of buffalo chicken with the crispy crunch of a perfectly baked tortilla. These spicy chicken snacks are not only great for game day but also make fantastic easy party appetizers or quick lunch ideas.

2 cups shredded rotisserie chicken
1 cup shredded cheese (cheddar or Monterey Jack)
1/2 cup buffalo sauce
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
10-12 small flour or corn tortillas
Olive oil spray or 2 tablespoons olive oil for brushing
1/2 cup ranch dressing or blue cheese dressing (optional)
Instructions
Preheat your oven to 425°F (220°C).
In a mixing bowl, combine the shredded chicken, shredded cheese, buffalo sauce, garlic powder, onion powder, and salt. Mix until well combined.
Warm the tortillas in a skillet over medium heat for about 30 seconds per side.
Place 2-3 tablespoons of the chicken mixture onto the lower third of each tortilla. Roll it tightly away from you, tucking in the sides as you go.
Arrange the rolled taquitos seam-side down on a baking sheet lined with parchment paper. Spray the tops lightly with olive oil.
Bake in the preheated oven for 15-20 minutes or until golden brown and crispy, flipping halfway through.
Remove from the oven and let cool slightly before serving.
