12 ounces of penne pasta, or your choice of pasta shape
1 tablespoon salt (for pasta water)
1 pound boneless, skinless chicken breasts
2 tablespoons Cajun seasoning for chicken
1 tablespoon olive oil
1/2 teaspoon black pepper
1 tablespoon butter
1 small onion, diced finely
2 cloves garlic, minced
1 bell pepper (red or green), sliced thinly
1 cup heavy cream
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Instructions
In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package directions until al dente, about 10-12 minutes. Drain the pasta and set aside.
Season the chicken breasts generously with Cajun seasoning and black pepper. Let the chicken rest for 15 minutes.
In a large skillet over medium-high heat, add olive oil. Once hot, add the seasoned chicken breasts. Cook for 5-7 minutes on each side until cooked through. Remove from skillet and let rest before slicing.
In the same skillet, add butter and once melted, add diced onion and sliced bell pepper. Sauté for 3-4 minutes until soft.
Add minced garlic and cook for an additional 30 seconds until fragrant.
Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese until smooth. Season with salt and pepper.
Add cooked penne pasta and sliced chicken to the skillet. Toss to combine. If too thick, add reserved pasta water.
Plate the pasta and garnish with additional Parmesan cheese and parsley, if desired. Serve warm.
