1 lb boneless, skinless chicken breast, cut into bite-sized pieces
Salt and pepper to taste
2 tablespoons olive oil
1 cup orzo pasta
4 cups chicken broth
1/2 cup heavy cream
1 cup fresh spinach, chopped
1/2 cup grated Parmesan cheese
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
1/2 teaspoon red pepper flakes (optional)
Fresh parsley, chopped (for garnish)
Extra Parmesan cheese (for garnish)
Instructions
Season the chicken pieces generously with salt and pepper. Heat olive oil in a large skillet over medium heat. Add the chicken and cook for about 5-7 minutes until browned and cooked through. Remove from skillet and set aside.
In the same skillet, add minced garlic, oregano, thyme, and red pepper flakes. Sauté for about 1 minute until fragrant.
Stir in the orzo pasta and cook for 1-2 minutes, allowing it to toast slightly.
Gradually add the chicken broth, stir, and bring to a gentle boil. Reduce heat to low, cover, and simmer for about 10 minutes until the orzo is al dente.
