2 cups fresh peaches, peeled and diced
1 cup granulated sugar
2 cups heavy cream, preferably cold
1 cup whole milk
1 teaspoon vanilla extract
1 tablespoon lemon juice
Pinch of salt
Chopped fresh peaches (optional)
Whipped cream (optional)
Crushed graham crackers or shortbread cookies (optional)
Chocolate shavings or syrup (optional)
Fresh mint leaves for garnish (optional)
Instructions
In a mixing bowl, combine the diced peaches with 1/4 cup of granulated sugar and the lemon juice. Let this mixture sit for about 15 minutes.
Blend the peach mixture in a blender or food processor until smooth. Reserve some peach pieces if you prefer chunks in your ice cream.
In a large mixing bowl, whisk together the heavy cream, whole milk, remaining sugar, vanilla extract, and a pinch of salt until the sugar is dissolved.
Gently fold the pureed peach mixture into the cream mixture. Add any reserved peach chunks if desired.
Cover the bowl with plastic wrap and refrigerate the mixture for at least 2 hours.
Pour the chilled mixture into your ice cream maker. Churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
Transfer the churned ice cream to an airtight container and smooth the top. Freeze for at least 4 hours or until firm.
