1 lb Italian sausage (sweet or spicy)
1 package (16 oz) potato gnocchi
1 tablespoon olive oil
1 medium onion, diced
3 cloves garlic, minced
1 cup chicken broth
1 cup heavy cream
1 cup spinach (fresh or frozen)
1 teaspoon Italian seasoning
Salt and pepper to taste
Grated Parmesan cheese for garnish
Fresh parsley, chopped for garnish
Instructions
In a large skillet over medium heat, add the olive oil. Once hot, add the Italian sausage, breaking it apart with a spatula. Cook until browned and cooked through, about 7-10 minutes. Transfer the cooked sausage to a plate and set aside.
In the same skillet, add the diced onion and sauté for about 3-5 minutes until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.
Pour in the chicken broth, scraping the bottom of the skillet to deglaze. Bring the broth to a simmer, about 2-3 minutes.
Add the potato gnocchi directly into the skillet. Cook for about 3-5 minutes, stirring occasionally, until the gnocchi starts to float to the top.
Stir in the heavy cream and return the cooked sausage to the skillet. Mix well and bring to a gentle simmer.
Add the Italian seasoning, salt, and pepper to taste. Fold in the spinach and cook for an additional 2-3 minutes until the spinach wilts.
Remove from heat and let it cool for a few minutes before serving.
