A refreshing and light meal perfect for summer, these sandwiches are bursting with flavor and easy to prepare. With layers of crisp cucumbers and creamy, herb-infused spreads, they are a delightful addition to your meal rotation.
Ingredients

1 large cucumber, thinly sliced
8 slices of whole grain or white bread
1 cup of cream cheese, softened (or a dairy-free alternative)
2 tablespoons of fresh dill, chopped (or other herbs of your choice)
Salt and pepper, to taste
1/2 cup of plain Greek yogurt (or vegan yogurt)
1 tablespoon of lemon juice
1 teaspoon of garlic powder
1 teaspoon of onion powder
Instructions
Prepare the Dressing: In a medium bowl, combine the Greek yogurt, lemon juice, garlic powder, and onion powder. Mix well until smooth. Adjust the consistency with a little water if needed.
Mix Cream Cheese: In another bowl, blend the softened cream cheese with chopped dill, salt, and pepper to taste. Ensure it is well combined for even distribution of herbs.
Assemble the Sandwiches: Spread a generous amount of the herb-infused cream cheese onto one side of each slice of bread. Layer the cucumber slices evenly over half of the slices.
Add Dressing: Drizzle a spoonful of the yogurt dressing over the cucumbers for extra flavor.
Top and Cut: Place the remaining slices of bread, cream cheese side down, on top of the cucumbers. Gently press down and cut each sandwich into quarters or triangles.
