2 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
2 cups fresh or frozen cherries, pitted and chopped
½ cup granulated sugar (for filling)
1 tablespoon cornstarch
1 tablespoon lemon juice
1 teaspoon vanilla extract (for filling)
1 cup powdered sugar (for glaze)
2 tablespoons milk
¼ teaspoon almond extract (optional)
Instructions
In a medium saucepan, combine the chopped cherries, sugar, cornstarch, lemon juice, and vanilla extract over medium heat. Cook for about 10 minutes, stirring occasionally, until the mixture thickens and bubbles. Remove from heat and let it cool completely.
In a large bowl, whisk together the flour, baking powder, baking soda, and salt. In another bowl, cream the softened butter and sugar until light and fluffy, about 3-5 minutes. Beat in the egg and vanilla extract until well combined.
Gradually add the dry ingredients to the wet mixture, mixing until just combined. Chill the dough in the refrigerator for at least 30 minutes.
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Roll the chilled dough into balls, flatten slightly, place a spoonful of cherry filling in the center, and fold the edges over to seal.
Place the st■ cookies on the prepared baking sheet and bake for 12-15 minutes until golden brown. Let them cool on a wire rack.
In a small bowl, mix the powdered sugar, milk, and almond extract (if using) until smooth.
Drizzle the glaze over the cooled cookies and allow to set before serving.
