A quick, nutritious dinner option packed with vibrant bell peppers and other vegetables, this Asian-inspired stir fry is a colorful celebration of flavors and textures.

1 pound ground turkey, preferably lean
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 cup broccoli florets
1 cup snap peas
1 medium onion, sliced
3 cloves garlic, minced
1 tablespoon fresh ginger, minced
1/4 cup soy sauce (or tamari for gluten-free)
2 tablespoons rice vinegar
1 tablespoon sesame oil
1 tablespoon honey or maple syrup
1 teaspoon cornstarch (optional)
2 tablespoons vegetable oil
Sesame seeds for garnish (optional)
Sliced green onions for garnish (optional)
Instructions
In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, and cornstarch (if using) until well combined and smooth. Set aside.
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the ground turkey and cook for about 5-7 minutes, breaking it apart, until browned and cooked through.
Stir in the minced garlic and ginger and sauté for 1-2 minutes until fragrant.
Add the sliced bell peppers, broccoli florets, snap peas, and onion to the skillet and stir-fry for 4-5 minutes until tender-crisp.
Pour the stir fry sauce over the turkey and vegetables, stirring well to coat everything evenly. Cook for an additional 2-3 minutes until the sauce thickens slightly.
Remove from heat and serve immediately, garnishing with sesame seeds and sliced green onions if desired.
