These easy no-bake berry cheesecake cups are the perfect solution for hot summer days, family gatherings, or any occasion where you crave a light and satisfying treat. With rich cream cheese, fresh berries, and a crunchy graham cracker crust, these dessert cups are both beautiful and delicious.

1 ½ cups graham cracker crumbs, finely crushed
½ cup unsalted butter, melted
¼ cup granulated sugar
8 oz cream cheese, softened to room temperature
1 cup powdered sugar
1 teaspoon vanilla extract
1 cup heavy whipping cream, whipped
2 cups mixed fresh berries (strawberries, blueberries, raspberries)
2 tablespoons granulated sugar (optional)
Instructions
In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until the mixture resembles wet sand.
Spoon about 2 tablespoons of the crust mixture into the bottom of each serving cup, pressing down firmly.
In a large mixing bowl, beat cream cheese until smooth. Gradually add powdered sugar and vanilla extract, mixing until fluffy.
In a separate bowl, beat heavy whipping cream until stiff peaks form.
Gently fold the whipped cream into the cream cheese mixture until just combined.
Spoon or pipe the cheesecake filling on top of the crust in each cup, filling them about three-quarters full.
In a small bowl, toss the mixed berries with granulated sugar. Let them sit for about 10 minutes.
Spoon the berry mixture on top of the cheesecake filling in each cup.
Refrigerate the cheesecake cups for at least 2 hours before serving.
