4 cups fresh strawberries, hulled and sliced
1/2 cup granulated sugar (adjustable)
1 tablespoon lemon juice
1 tablespoon cornstarch
1 cup all-purpose flour
1/2 cup granulated sugar (for topping)
1 tablespoon baking powder
1/4 teaspoon salt
1/2 cup milk
1/4 cup unsalted butter, melted
1 teaspoon vanilla extract
Instructions
Preheat your oven to 350°F (175°C).
In a mixing bowl, combine the sliced strawberries, granulated sugar, lemon juice, and cornstarch. Toss gently and set aside for 10 minutes.
In another bowl, whisk together the flour, sugar (for topping), baking powder, and salt. Gradually add the milk, melted butter, and vanilla extract, stirring until just combined.
Pour the prepared strawberry mixture into a greased 8x8 inch baking dish. Spoon the cobbler batter over the strawberries, spreading evenly.
Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the topping is golden brown.
