1 pound ground beef (or turkey)
1 packet taco seasoning (or homemade)
1 cup cherry tomatoes, halved
1 cup shredded lettuce
1 cup diced bell pepper (any color)
1 cup corn (canned or frozen, thawed)
1 can black beans, rinsed and drained
1 cup shredded cheese (cheddar or Mexican blend)
2 cups Fritos corn chips
1 cup sour cream
1/2 cup mayonnaise
1 tablespoon lime juice
1 teaspoon taco seasoning (optional)
Instructions
In a large skillet over medium heat, brown the ground beef for about 5-7 minutes, breaking it apart with a spatula until fully cooked. Drain excess fat if necessary.
Sprinkle the taco seasoning over the cooked beef. Stir in 1/4 cup of water and cook for an additional 2-3 minutes until the mixture is well combined.
In a mixing bowl, combine sour cream, mayonnaise, lime juice, and taco seasoning (if using). Whisk until smooth and set aside.
In a large bowl, layer the shredded lettuce, black beans, corn, bell pepper, cherry tomatoes, and ground beef mixture. Gently toss to combine.
Sprinkle shredded cheese and Fritos over the top just before serving to retain their crunch.
Drizzle the dressing over the salad or serve it on the side.
