1 teaspoon baking powder

1 cup unsalted butter, softened to room temperature
1 cup granulated sugar
1 cup packed brown sugar
2 large eggs
1 teaspoon vanilla extract
1 (3.4 oz) package instant vanilla pudding mix
1 cup Fruity Pebbles cereal
1 cup white chocolate chips (optional)
Instructions
Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
In a medium bowl, whisk together the flour, baking soda, baking powder, and salt until well combined. Set aside.
In a large mixing bowl, use an electric mixer to cream the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 3-4 minutes.
Add the eggs one at a time, mixing well after each addition. Then, add the vanilla extract, mixing until fully incorporated.
Add the instant vanilla pudding mix to the butter and sugar mixture, mixing until combined.
Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined.
Gently fold in the Fruity Pebbles and white chocolate chips, if using.
Using a cookie scoop or tablespoon, scoop the dough onto the prepared baking sheets, spacing them about 2 inches apart.
Bake the cookies in the preheated oven for 10-12 minutes or until the edges are lightly golden brown.
Remove cookies from the oven and allow them to cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely.
