4 cloves garlic, minced
2 tablespoons fresh lemon juice
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup finely grated Parmesan cheese
1/2 cup breadcrumbs (preferably Italian style)
1 tablespoon chopped fresh parsley (optional)
10-12 wooden or metal skewers
Instructions
In a large mixing bowl, combine the olive oil, minced garlic, lemon juice, dried oregano, dried basil, salt, and black pepper. Whisk until well blended.
Add the cubed chicken breasts to the marinade. Ensure each piece is well-coated and refrigerate for at least 30 minutes, or up to 4 hours.
