Ingredients
Scale:
1/4 cup honey
3 tablespoons soy sauce (or tamari for gluten-free version)
2 tablespoons rice vinegar
2 cloves garlic, minced
1 teaspoon grated fresh ginger (optional)
4 cod fillets (about 6 ounces each)
Salt and pepper, to taste
1 tablespoon olive oil
1 tablespoon sesame seeds (for garnish)
Chopped green onions (for garnish)
Instructions
Preheat your oven to 400°F (200°C).
In a medium bowl, whisk together the honey, soy sauce, rice vinegar, minced garlic, and grated ginger until well combined.
Rinse the cod fillets under cold water and pat them dry with paper towels. Season both sides with salt and pepper.
Place the cod fillets in a shallow dish and pour the honey marinade over them. Allow them to marinate for about 15-20 minutes, turning occasionally.
Transfer the marinated cod fillets to a lined baking sheet, discarding any leftover marinade. Drizzle the olive oil over the fillets and bake in the preheated oven for 12-15 minutes.
Once cooked, remove the cod from the oven and sprinkle with sesame seeds and chopped green onions for garnish.
