A fun, easy way to create your own chocolate caramel bars bursting with layers of nougat, creamy peanut butter, and luscious caramel.
Ingredients
Scale:
1 cup granulated sugar (for the nougat layer)
1/2 cup light corn syrup (for the nougat layer)
1/2 cup heavy cream (for the nougat layer)
1 teaspoon vanilla extract (for the nougat layer)
1/2 cup unsalted butter (cubed, for the nougat layer)
1/2 teaspoon salt (for the nougat layer)
1 cup unsweetened peanut butter (for the nougat layer)
2 cups marshmallow fluff (for the nougat layer)
1 cup chopped roasted peanuts (for the nougat layer)
1 cup granulated sugar (for the caramel layer)
1/4 cup heavy cream (for the caramel layer)
1/4 cup unsalted butter (for the caramel layer)
1/2 teaspoon salt (for the caramel layer)
2 cups chocolate chips (semi-sweet or milk chocolate, for the chocolate coating)
1 tablespoon coconut oil (optional, for smoothness in chocolate coating)
Instructions
Prepare the Nougat: In a medium saucepan, combine the granulated sugar, light corn syrup, and heavy cream. Cook over medium heat, stirring constantly until the mixture comes to a boil.
Once boiling, stop stirring and allow to simmer for 5 minutes, or until the mixture reaches a soft-ball stage (about 240°F or 115°C). Remove from heat immediately.
Stir in the cubed butter, peanut butter, vanilla extract, and salt until smooth. Incorporate the marshmallow fluff until fully blended.
Fold in the chopped peanuts, spreading the nougat mixture into a greased 9x13-inch baking dish. Let it cool to room temperature for about 30 minutes.
Make the Caramel: In another saucepan, combine granulated sugar, heavy cream, butter, and salt. Cook over medium heat, stirring until the sugar dissolves completely.
Bring to a boil and then reduce the heat, allowing it to simmer until it thickens slightly, about 5-7 minutes. Let it cool until slightly thickened.
Pour the warm caramel over the nougat layer, spreading it evenly. Allow it to set for at least 30 minutes.
Prepare the Chocolate Coating: In a microwave-safe bowl, combine the chocolate chips and coconut oil. Heat in 30-second intervals, stirring until smooth.
Once the caramel layer has set, cut the entire mixture into bars. Dip each bar in the melted chocolate to coat completely.
Allow the chocolate to set at room temperature or in the refrigerator.
