Instructions

  1. In a bowl, mix together the salt, black pepper, garlic powder, and onion powder. Rub this spice mixture evenly over the chicken breasts. Let the chicken marinate for about 30 minutes before grilling.
  2. In a separate bowl, combine the BBQ sauce and bourbon. Stir well and set aside a few tablespoons for basting later.
  3. Preheat your grill to medium-high heat (about 375°F/190°C). Grill the chicken for 6-8 minutes on each side, basting with the bourbon glaze during the last few minutes of cooking. Chicken is done when it reaches an internal temperature of 165°F (75°C). Let it rest for 5 minutes before slicing.
  4. Scrub the russet potatoes and poke holes in them. Rub with olive oil and sprinkle with salt and pepper. Wrap in aluminum foil and place on the grill. Cook for about 40-50 minutes until tender.
  5. Remove the potatoes from the grill, unwrap them, and cut in half lengthwise. Scoop out some flesh and mix it with sour cream and half of the cheddar cheese. Stir in the grilled chicken pieces.
  6. Spoon the filling back into the potato skins, top with remaining cheddar cheese, and return to the grill for an additional 5 minutes until cheese is melted.
  7. Remove from the grill, drizzle with additional BBQ sauce if desired, and sprinkle with chopped green onions before serving.
