3 cups cooked rotini pasta (or penne/bowtie pasta)
2 cups cooked, shredded chicken (about 2 large chicken breasts or rotisserie chicken)
2 cups marinara sauce (store-bought or homemade)
1 cup ricotta cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
2 teaspoons Italian seasoning
1/2 teaspoon garlic powder
Salt and pepper to taste
1 cup shredded mozzarella cheese (for topping)
1/2 cup grated Parmesan cheese (for topping)
1 tablespoon chopped fresh parsley (optional for garnish)
Instructions
Preheat your oven to 375°F (190°C).
In a large mixing bowl, combine the cooked shredded chicken, marinara sauce, ricotta cheese, 1 cup of shredded mozzarella, Italian seasoning, garlic powder, salt, and pepper. Mix thoroughly.
Add the cooked rotini pasta to the chicken mixture and stir gently to combine.
Pour the mixture into a greased 9x13 inch baking dish and spread it out evenly.
Sprinkle the top with the remaining 1 cup of shredded mozzarella and 1/2 cup of grated Parmesan cheese.
