1 ½ cups graham cracker crumbs
½ cup unsalted butter, melted
⅓ cup granulated sugar
1 cup finely chopped pistachios (reserve some for topping)
16 ounces cream cheese, softened
½ cup powdered sugar
1 teaspoon vanilla extract
1 cup heavy whipping cream
2 cups fresh raspberries (plus extra for garnish)
⅓ cup raspberry sauce
⅓ cup chopped pistachios
Instructions
Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, melted butter, granulated sugar, and chopped pistachios. Mix well until the crumbs are fully coated.
Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for about 10 minutes or until golden brown. Remove from the oven and let it cool completely.
In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add the powdered sugar and vanilla extract, mixing until well combined.
In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
Gently fold in the raspberries, being careful not to crush them too much.
Pour the cheesecake filling into the cooled crust, smoothing the top with a spatula. Cover with plastic wrap and refrigerate for at least 4 hours, or preferably overnight.
Before serving, drizzle raspberry sauce over the cheesecake and sprinkle with additional chopped pistachios. Garnish with whole raspberries.
Carefully remove the sides of the springform pan. Slice the cheesecake and serve chilled.
