Ingredients
Scale:
1 ½ cups almond flour
¼ cup granulated sugar
½ teaspoon salt
1/3 cup unsalted butter, melted
1 large egg
3-4 ripe plums, pitted and sliced
2 tablespoons brown sugar
1 teaspoon vanilla extract
1 tablespoon cornstarch
½ cup rolled oats
½ cup almond flour
¼ cup brown sugar
¼ cup sliced almonds
½ teaspoon cinnamon
¼ cup unsalted butter, melted
Instructions
Preheat your oven to 350°F (175°C). In a mixing bowl, combine the almond flour, granulated sugar, and salt. Stir to mix evenly until there are no lumps.
Add the melted butter and egg to the dry mixture. Mix until a dough forms.
Press the dough into the bottom and up the sides of a tart pan (about 9 inches in diameter). Prick the bottom with a fork.
Bake the crust for 12-15 minutes or until it turns lightly golden. Let it cool slightly on a wire rack.
Slice your plums and place them in a bowl. Add the brown sugar, vanilla extract, and cornstarch. Toss gently and set aside to macerate for about 10 minutes.
In another bowl, combine rolled oats, almond flour, brown sugar, sliced almonds, and cinnamon. Pour in the melted butter and mix until crumbly.
Spread the plum mixture evenly over the cooled almond flour crust. Sprinkle the almond crumble topping generously over the plums.
Bake for 30-35 minutes or until the topping is golden brown and the plums are bubbling. Let cool for 15 minutes before slicing.
