Instructions
- In a large mixing bowl, whisk together the eggs, whole milk, vanilla extract, ground cinnamon, and salt until fully combined.
- Preheat a large skillet or griddle over medium heat. Add a tablespoon of unsalted butter and let it melt.
- Dip each slice of brioche bread into the egg mixture, ensuring both sides are saturated but not overly soggy.
- Place the soaked brioche slices onto the skillet. Cook for about 3-4 minutes on each side, or until golden brown.
- In a small bowl, combine the sliced peaches, brown sugar, lemon juice, and ground cinnamon.
- In a small saucepan, over medium heat, cook the peach mixture for about 5 minutes, until the peaches are tender.
- Once the French toast is cooked, transfer it to plates and top with the warm peach mixture.
- Finish with a drizzle of maple syrup and a dusting of powdered sugar, if desired.
