Ingredients

  • 1 lb. sirloin steak, thinly sliced
  • 2 cups white rice
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, sliced
  • 1 can diced tomatoes
  • 2 cups beef broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste

Directions

  1. In a large skillet, heat some oil over medium-high heat. Add the sliced steak and cook until browned on all sides. Remove the steak from the skillet and set it aside.
  2. In the same skillet, sauté the onion, garlic, and bell pepper until softened. Add the diced tomatoes, beef broth, cumin, paprika, salt, and pepper. Stir to combine.
  3. Add the rice to the skillet and stir well to ensure it is evenly coated with the tomato mixture. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 20 minutes or until the rice is cooked through.
  4. Once the rice is cooked, return the cooked steak to the skillet and stir to combine. Cook for an additional 5 minutes to allow the flavors to meld together.
  5. Remove the skillet from the heat and let it sit for a few minutes before serving. Garnish with fresh cilantro or sliced avocado, if desired.
  6. Enjoy your delicious Steak Loco Rice hot and fresh from the skillet!
